Malai MaalPua is famous streetfood. This is our version of MaalPua. If you follow all the steps, we are sure you will find an amazing taste of real MaalPua, also check out our wrapping style which makes it look more appealing. Mini MaalPua, with malai is a cherry on the top!
Let’s check the recipe:
Step 1: Making of MaalPua
In a large mixing bowl put
- 1 1/2 cups of all purpose flour ,
- Sugar 6 tbsp ,
- Milk 1/2 litre ( i used tetrapak)
- Pinch of yellow food colour
Mix very well these ingredients, and remove all the lumps. Now whisk 1 egg in a separate bowl and add whisked egg with the mixture. Don’t worry with the consistency of batter. As you can see its quite runny. It will get thicker after resting in refrigerator. Cover and let it rest for 4 to 6 hour in a refrigerator.
Heat nonstick fry pan, add desi ghee and pour maal pura mixture with a deep spoon and add more ghee from corner of maalpura. When one side gets done, flip to the other side. When its completely cooked, remove from heat. Prepare all MaalPuas using the same method mentioned above. You can also make mini maalpuas in a small pan too.
Meanwhile prepare malai on next stove to save some time.
Step 2: Making of Malai/Rabri
In a heavy bottom n deep skillet add
- 1/2 litre (500 ml) milk on medium high heat
- 50 grams khoya
- 2 Pieces Green cardamom (whole)
Let it cook and stir with spatula. Now add
- 6 tbsp condensed milk and mix well
Turn the heat slow and cook till it turns into creamy thick texture. Don’t over cook it as it will get thicker after refrigerating. Lastly add
- Few drops of kewra. Mix n remove from heat .
Note : If you don’t like flavor of cardamom, you can skip it.
Time to serve:
Spread malai on prepared mini maalpuas. You can wrap it in your favorite wrappers. Enjoy street food with your loved ones.
